Why do we keep learning about God?

The truth of God does not change, but your capacity to understand it can certainly grow. There are things known superficially at first that become far deeper over time. Faith matures when it returns to what is essential with more light, more experience, and more humility. It is not about changing your faith, but about entering more deeply into it. God is always greater than our explanations. That is why studying the faith does not consist in complicating everything, but in getting to know better someone whom we never finish encompassing.
